I woke up this morning thinking my husband and I were going to have a lazy Sunday, ending with us watching the Super Bowl snuggled up together on the sofa, only to hear these words as we rolled out of bed, “Did I tell you I invited some friends over to watch the game? Can you make some food?”
“What?! Sure. 🙁
So I put on some sweat pants and drove over to Trader Joe’s to get the stuff I need to make my three ingredient chili.
Back in the days before covid, Trader Joe’s used to make recipes for you to sample in the back of the store. One day while I was shopping they were making this. It’s so easy, so delicious, and so versatile.
You need three items. I use ground turkey, a can of kidney beans, and a jar of Trader Joe’s Chunky Salsa. You can use lean ground beef if you want, but the lean turkey makes me feel like I’m eating something healthy while I gorge on the chips and extra cheese I put on it.
I usually get two of each item so I can have enough for leftovers. For a crowd of ten, I would probably buy at least four packages of each item. It will take you more time to put on your clothes to go to the store than it will to make this chili. It’s so easy!!
All you do is brown the meat. I like to add some kosher salt and ground pepper to the meet while it browns. Then add in the kidney beans (drained) and salsa, and stir it together until it’s all bubbly and hot. It takes less than ten minutes to make this.
You can serve it in several different ways. On a cold day I eat a bowl of it topped with shredded cheese, avocado slices, sliced jalepeno, a dollop of sour cream, and a few cilantro leaves sprinkled on top.
Today I’m gonna serve it nacho style. Everyone can grab a plate, and pile on some tortilla chips, the chili, and any other accoutrement they want. I’ve got sliced avacados, tomoatoes, and fresh jalepenos shown here, but I’ll be sure to have a bowl of sour cream, some cilantro leaves and maybe a giant bowl of melted velveeta cheese that everyone can ooze over top. Yum!
